#Cookout Week ~ Cheesecake Fruit Salad


Welcome to the final day of #CookoutWeek! See my kick-off post and make sure to enter the fantastic giveaway! Today I'm sharing an incredibly rich, tasty dessert that is a perfect way to enjoy summer fruit.



This creamy treat can be served with some graham cracker dippers which would be a perfect scooper and accompaniement. The cheesecake base is rich and creamy, and really goes perfectly with the fruit. You could mix and match so many different options for the fruit - I meant to chop some banana in there as well and didn't get around to it before pictures were taken. The blackberries were particularly good with the rich creamy base. This would be great for any summer cookout!



Cheesecake Fruit Salad adapted from Cooking Life to the Fullest

Ingredients
1/2 package cream cheese, softened
1 cup of vanilla yogurt
1/2 cup heavy whipping cream (whipped to soft peaks with 2 tsp powdered sugar)
1/2 (3½ ounce) package cheesecake flavor instant pudding or pie filling mix
½ bag of miniature marshmallows
3 cups mixed fresh fruit (I used grapes, blueberries, blackberries and strawberries)

Instructions
  1. In a bowl, mix cream cheese, yogurt, pudding and cool whip until creamy.
  2. Fold in fruit.
  3. Garnish with additional fruit.
