Toasted Croissant Breakfast Sandwiches

We love fixing these for a breakfast treat. They can be filled with whatever yummy breakfast toppings you like most - I like classic egg, bacon, and cheese. My husband likes ham and bacon with cheese, or sometimes sausage and cheese. These get flaky and toasty in the oven and are a satisfying and delicious way to start your day!

I like leaving my egg yolks a little runny, but if you want less mess just break the yolk during frying. Cook the bacon to your preferred level of crispiness, or use whatever your favorite breakfast meat is in place of the bacon. Enjoy!

Toasted Croissant Breakfast Sandwiches

Ingredients
4 large bakery croissants
4-oz cheese (in 1 oz slices)
4 large strips thick cut bacon, cooked to crispy
4 fried eggs, yolks broken (if desired)
salt and pepper

Directions

  1. Preheat oven to 350 degrees.
  2. Slice croissants in half, and place cut side up on a baking sheet.
  3. Place cheese slice on bottom half, or break in half and put half on each side.
  4. Put croissants in preheated oven for 7-8 minutes (or until lightly toasted and cheese is melted).
  5. Meanwhile, prepare eggs and bacon to your preferred done-ness. Season eggs lightly with salt and pepper if desired.
  6. When croissants are done, remove from oven. Add egg and bacon to bottom halves, and place the top half on.
  7. Serve and enjoy while hot.
