Applesauce Muffins with Cinnamon Streusel Topping

This recipe comes from MyRecipes.com and we really enjoyed it! They are very "coffee cake" like in taste and texture and go great with a pat of butter in the middle, or on top. We served these with fresh fruit salad for a very tasty breakfast treat over the weekend!

Makes 17-18 muffins

Ingredients
4 cups all-purpose baking mix (I used Bisquick)
1/2 cup sugar
2 teaspoons ground cinnamon
2/3 cup (generous) applesauce
1/2 cup milk
1/4 cup vegetable oil
2 large eggs

Cinnamon Streusel Topping
1/3 cup sugar 
1/4 cup packed light brown sugar
3 tablespoons all-purpose baking mix
1/4 teaspoon ground cinnamon
2 tablespoons butter, melted

Instructions
  1. Preheat oven to 400 degrees. Grease 18 regular sized muffin cups.
  2. Whisk together the baking mix, sugar, and cinnamon in a large bowl; make a well in center of mixture.
  3. Whisk together the applesauce and next 3 ingredients in a small bowl; add to sugar mixture, stirring just until dry ingredients are moistened. Spoon batter into prepared muffin pans, filling about 2/3 full. 
  4. Create cinnamon streusel topping by whisking together the first 4 topping ingredients until blended. Stir melted butter into the sugar mixture until well blended and crumbly. Evenly distribute the streusel topping over the muffin batter.
  5. Bake at 400 degrees for 18 minutes or until a wooden pick inserted in the center comes out clean and tops are golden brown. Cool in pan on a wire rack for about 5 minutes and then remove from pan to a wire rack. Serve while warm or allow to cool.
